  • 1/3-1/2 cup powdered sugar, sifted sweetens the filling without graininess
  • 1 teaspoon vanilla extract simple flavor enhancer
  • 1/2 cup heavy cream or whipped topping lightens the filling to a spoonable texture
  • 1/2 teaspoon lemon juice (optional) brightens the strawberry flavor

Optional add-ons

  • Mini chocolate chips for kids who like a little chocolate
  • Toasted chopped almonds or walnuts adds a textural contrast (if no nut allergies)

Instructions
 

Preparation

  • Pop your serving tray or mini muffin tin in the fridge or freezer for a few minutes.
  • In a medium bowl, combine graham cracker crumbs and melted butter until evenly moistened.
  • Press a small spoonful of the crumb mix into the bottom of mini paper liners or a lined mini muffin tin.

Mixing Filling

  • In a clean bowl, beat softened cream cheese with powdered sugar and vanilla until smooth.
  • Fold in the finely chopped strawberries and a squeeze of lemon if using.
  • If adding whipped cream, fold it in last to lighten the filling.

Assembly and Chilling

  • Spoon or pipe the filling onto each crust portion.
  • Garnish immediately with a thin strawberry slice, a sprinkle of crumbs, or a few mini chips.
  • Chill assembled bites for at least 1 hour.

Serving

  • Serve cold or slightly chilled.
  • Leftovers keep well in an airtight container in the fridge for 3–4 days.
  • For freezing, place assembled bites on a tray until firm, then transfer to a freezer-safe container.

Notes
