Instructions
 

Preparation

  • Preheat your oven to 350 degrees F and line two large baking sheets with parchment paper.
  • In a large bowl, combine creamy peanut butter, unsalted butter, and light brown sugar using a hand mixer until smooth and creamy, about 2-3 minutes.
  • Incorporate the egg and vanilla extract, mixing well for about 30 seconds.
  • Add all-purpose flour, cornstarch, and kosher salt. Mix on low speed until just combined.
  • Use a 2-tablespoon cookie scoop to drop dough onto baking sheets, flatten each into a 3-inch disk.
  • Place about 1 tablespoon of marshmallow fluff in the center of each disk.
  • Seal the dough around the marshmallow fluff to ensure it is covered.

Baking

  • Space the cookie balls about 2 inches apart on the baking sheets and bake for 10-12 minutes until lightly golden.
  • Allow cookies to rest on the baking sheets for 10-15 minutes before transferring to a wire rack.

Notes

For best results, use room temperature ingredients to prevent dense cookies. Let them cool to set properly before decorating.
